Italian Chicken Wrap - for two

A simple, rewarding and tasty dish to make. It never fails to impress.

In a Nutshell
​By wrapping the mozzarella covered chicken breast in pancetta/bacon with the seam at the bottom, the chicken breast stays moist and tender.

Ingredients:
  • 2 chicken breasts
  • 8 thin slices of pancetta (bacon works too)
  • 5-6 large olives, sliced
  • 1 lemon
  • Bunch of spring onions
  • 2 tblsp Olive oil
  • 100g of mozzarella - sliced thinly
  • 4-6 leaves of fresh sage

Directions:
  • Distribute thinly sliced mozzarella on the chicken breasts
  • Place 2-3 sage leaves on each
  • Wrap gently with the pancetta or bacon, mozzarella side up
  • Distribute sliced olives and half the lemon (sliced)
  • Place trimmed spring onions to left and right of the chicken breasts
  • Mix juice from half a lemon with 2 tablespoons of olive oil and sprinkle on the chicken and spring onions
  • Roast at 180C (fan) in the oven for 20-25 minutes depending on the size of the chicken breasts.
